Instant Pot Breakfast Risotto

Risotto for breakfast? Why not!
Here is a perfect creamy, garlicky, start to your day!

My family loves risotto, but I do not have the patience to stand over the stove stirring while I have other things cooking. So when I finally figured out how to cook it in the Instant Pot I was elated!
Prep Time: 5 minutes Cook Time: stovetop 12 minute / Instant Pot 8 minutes Total Time: 25 minutes Servings: 8
Ingredients:
4 tablespoons butter
1 small onion minced
3 cloves garlic minced
1 tablespoon thyme leaves
4 cups arborio rice
1 cup dry white wine
4 cups chicken stock or vegetable stock
1 teaspoon kosher salt
1 cup Colby Jack Cheese plus more for serving
1 cup heavy cream or whole milk
Instructions:
You can use your saute button on your Instant Pot for this part, but I much rather use a pan on the stove top
Preheat your pan to medium heat
Put finely chop onion and 1 tablespoon of butter into pan and saute for about 5 to 8 minutes depending on how well you like your onions cooked.
Add in the garlic and thyme leaves and saute 3 minute longer.
Add in the rice 3 tablespoons butter and toss the rice with and onions to coat. Toast the rice for about 2 minutes.
Add in the dry white wine and let simmer for about 5 minutes.
Transfer all ingredients from the pan to the Instant Pot
Set the Instant Pot to high pressure for 8 minutes.
Let the pressure release naturally for at least 5 minutes.
Stir in the Cheese and heavy whipping cream.
Let sit to thicken 2 to 3 minutes and stir.
