IBS Friendly Recipes

Years go I worked on another blog called Home of the Heatons which was similar to this blog. It just dealt with different issues and topics that were apart of my life at the time. One of those things was IBS (Irritable Bowel Syndrome) causing me to be on a very strict Low-FODMAP Diet (click here to read my post You Are What You Eat to learn more). I have decided to bring over my old IBS friendly recipes and create easy to print recipe cards to go with them in hopes that this helps someone.

Ingredients:

Directions

  • In a pan add 3 tbsp. Onion Olive Oil, Chopped Carrots and Cubed Butternut Squash.

  • Saute for about 10 minutes or until the carrots and squash are slightly mushy

  • In a pot add the chicken broth, bring to a boil, and turn down to a simmer.

  • Add the Onion Olive Oil, Chopped Carrots and Cubed Butternut Squash to the pot.(I didn't add in seasoning, if you want to add in some now is when you would want to add it)

  • Let it all simmer for 40 minutes.

  • Take half the indigence from the pot and blender it to a desired texture.

  • Repeat with the second half.

  • Add the 1 Cup Almond Milk.

  • Bring back up to a simmer for 5 minutes.

  • Let it set a bit and cool down and it is ready to serve!



Ingredients:

  • 8 boneless skinless chicken breast

  • 4-5 apples sliced

  • 1 cup chicken broth

  • Salt to taste


Directions:

  • Put inner pot in Instant Pot

  • Add chicken broth

  • Layer the chicken and apples as you add them in next. 3-4 chicken breast then a layer of apples, then 3-4 chicken breast, again apples. Repeat if necessary leaving a layer of apples on top.

  • Seal with lid making sure the valve is set to pressure

  • Set pressure to high and time to 15 minutes.

  • Natural release for 5 minutes.

  • Transfer chicken and apples (I do this part on my cutting board)

  • Shred the chicken and mash the apples (creating an applesauce)

I love using this chicken as is or in few different recipes, chicken sliders, pasta, burritos, sandwiches ect.
