Breakfast Recipes, Eggs, Hash Browns, and Sausage

Happy Friday everyone! I am so excited to finally start posting my own recipes here on GCOAB. Because this isn't just about the recipes, but also about saving money as well I will be sharing how or where I purchase most of the ingredients with links (if possible). My goal is to share an entire meal of recipes and eventually have enough recipes built up on this blog to start sharing how I buy in bulk and meal plan to save even more money. Breakfast: Eggs, Potatoes, Chicken Sausage, and Avocado

Delicious fluffy scrambled eggs
Prep Time: 5 minutes Cook Time: 10 minutes Total Time: 15 minutes Servings: 4
Ingredients:
6 medium eggs
1/4 cup heavy whipping cream (or sour cream depending on taste and ingredients)
Salt to taste
Green onion (optional)
Instructions:
In cold sauce pot crack all the eggs
Use flat wooden spatula to vigorously mix the eggs, (you will be constantly stirring the whole time the eggs are cooking) then turn on burner to medium high heat.
Continue to stir using the flat end of the spatula to scrap the bottom of the pot.
When the eggs just start to thicken take the pot off the heat for 1 minute, while stirring. Then back on for 1 minute, back off for a minute, until eggs have the consistency of cottage cheese.
Now add the whipping cream or sour cream (I have also used whole milk it just turns out not as fluffy) make sure it all gets mixed in. Still taking the pot on and off the heat.
Once they look almost fully cooked, add the salt, finish cooking. The eggs should be light and fluffy with most of the liquid cooked off or thickened.
Do not over cook thinking they need to be totally dry.

Best way to save money on this dish, I buy eggs by the 60 count flat, keeping an eye on which stores has them the cheapest that week. Between breakfast and cooking/ baking from scratch we will go through a flat in 1 to 2 weeks.
Chicken Sausage

Aidells' All Natural Chicken & Apple Sausage is my family's favorite sausage and one of our favorite breakfast items. Even more to love is I rarely pay full price for them. Between coupons, coupon apps, Ibotta and sales I usually pay about $2 a package for what normally costs $4.99 up to $6.00 depending on the store you go to. Also they freeze very well so stock up and freeze the extras when they go on sale.
There are 2 ways I save on the crazy amount of hash browns my family consumes in a week. The first one is to watch the frozen section for sales, and coupons for the prepaid frozen hash browns (that is what is in the picture above). The other way is to make them from scratch, which tastes worlds better but does take more time than the frozen.

Ingredients:
8 medium russet potatoes
1 cup grated parmesan cheese
1/2 sweet onion
2 medium eggs
1/2 cup of flour
1 tbsp salt
Instructions:
Wash the dirt off the potatoes
This step can be done 1 of 2 ways
Put them in an Instant Pot and set to high pressure for 0 minutes and quick release the pressure.
Fill a pot with water, add in the potatoes, bring to a boil for 3 minutes.
Remove from heat and peel the potatoes skin with your hand of you don't want the skin. We leave the skin on.
Shred the potatoes with a cheese shredder, they should be soft but not mushy.
Chop the onions to the desired size (I like to leave them a little chunky
In a large bowl, mix in all of the ingredients, here there are 3 of different ways I like to cook these.
Traditional frying pan with butter or oil: preheat pan to medium heat, make burger sized hash brown patties and fry until golden brown flip and fry the other side. Continue till all are done.
Air fryer: make burgers sized hash brown patties, spray both sides with butter or olive oil spray. Put as many as will fit depending on the size of your AF in the air fryer for 7 minutes, then flip and air fry 7 minutes, or until golden brown on both sides.
Oven: preheat oven to 400°f. Spray a cookie sheet with nonstick spray, or use parchment paper. Make cover the cookie sheet with the hash brown. Bake for 15 to 20 minutes or until golden brown.

Slice an avocado plate you food and serve!
